If you want it to fluff, use no oil even to grease it finally and make sure your dough is soft. real soft.. so knead well. so well that it comes as a ball without sticking to the vessel. This is the best way,and we bengalis follow this most of the time.. hope this helps.

dough should be ... ( 4 days ago by Manjulaskitchen)
dough should be soft and need to knead the dough for few minutes. that helps rolling roti and makes them soft. Do not use too much dry flour when you are rolling them. After making each roti cover it, steam from roti keeps roti soft.

Mrs. Manjula, I am so happy to find your video! From watching Hindi movies this summer, I became interested in trying to make some Indian dishes- particularly Indian flatbreads since they are so world famous. The problem was books cannot give the real idea of what the texture of the dough should be, or how thick to roll it. Now I see my dough was too wet and I left them too thick, and maybe I need a heavier pan. I am trying again tomorrow! Shukriya! Kate in Brooklyn

Ghee is added for taste. It is optional. You can also use butter instead of ghee. It will make it yummy and soft but lots of fats also come with it.. hehe.. :)
It depends entirely upon taste
