What are the principles of socialism and what is the moral foundation that socialism is built on?
Is is all about who owns the "means of production" and if so why is that important?

You can read books on the subject of what the moral foundations of socialism are but the main component is that people should have a say in affairs to the degree they are affected. More easily put democracy within the economy. For example the U.S. through the pentagon funds high technology. Did any of us have a say in this decision? all that money could be going somewhere else.

who owns the means of production is very important because they get to run the place. Its also important to have any kind of meaningful democracy. John Dewey put it best when he said that is the U.S. doesn't change from industrial feudalism (corporations& such) politics will just be the shadow cast by big business.

Is the means of production inclusive of labor, skills, and ingenuity in this regard, or is it limited to machinery, land, and money?
In a free market do the consumers not "run the place"?
Means of production without a quorum of customers are just lumps of steel, a view, or a warehouse containing a collection of non collectables.

So if I define democracy as mob rule and something that should be limited, can I still be a socialist?
What if I think that the free market lets everyone have a say, where as in democracy only the majority having a say?

Using the present system in place in the U.S. as an example we have a very limited form of democracy mainly rafifaction ( meaning every few years we vote for someone who will do the less damage) any meaningful form of democracy would have a hand in forming decisions that affect them. so we are remote from mob rule.

When you say free market I would need you to clarify what you mean before I really comment. Does it mean corporations or just individuals. Is there a state structure?

the means of production specifically means land, money, machinery. However the labor, skills, innovation, etc are all things that come from the human side of the production. and in a democratic workplace the individual would be able to present an idea to either a committee or elected management (whatever the workplace decides) and then decide if it has merit enough for investment.

Customers will not be wholly excluded from this process.
for example say a family needs a house built they would go to a contracting firm. they would setup the design location etc. they would in turn work with the family to decide what jobs get contracted to who. the contractors will get the supplies from a supplier. the same as it works now the difference being that these firms are run by the workers who can now work directly with the family that needs the house.

Decision making, goal setting, and organizing are not really the forte of democracy.
Popular ideas are as often as not wrong. Every new idea that we ever had, and now widely hold as true, was held by a minority first and usually a minority of one.
I am not sure that bringing democracy into the workplace is a good idea.

I thought that the free market by giving every consumer a say in the products and service they consume that that served the purpose of giving everyone a hand in the decision as to how to organize the means of production and all resources in a society.

Majority rule still prevails in the US over the rights of individuals. A newly elected government will only to the "least damage" if that is manifested in the policies that the majority wants. If the opposite is true then more damage is equally likely ... regardless of how you define damage.
