Shellfish live in their own shit basically (cause they grow in the sand) so it isn't kosher. Certain Jews (those who choose to follow a strict religion) don't eat things that aren't cleaned and/or blessed. Their dairy products and meats must be cooked separately. Shellfish and pork products are decidedly not clean enough (although in reality pigs are clean animals when they aren't forced to live in stys). I'm not Jewish so try not to tear apart my explanation.
