7/8 has easy subdivisions like 2+2+3 (this song)
and 4+3 or 3+4....
it is hard to define a division such as 2+3+2, or at least hard to define where the down beat is -in my opinion....
So if you break down a "complex" pattern into easier subdivisions (as you mentioned) it will be sooo much easier to play! and the hardest part will always be jumpin between different time signatures, like in Mathcore.
