fake.... you can't just touch it... if you pay attention to the guy's finger, there's a salt crystal sticking to it. we did this in chemistry a few weeks ago. not sure what it's called in english because i have the class in german...

super-saturation, you heat a solution so that it dissolves more of the solute. If you add a little bit more when cooled the solution will crystalize i.e. super saturated.
